             I think following needs to be take care of before jump into this

1) These days people do not have time so you need to provide doorstep.
2) It should be one stop shop for all vegetable needs not only selected one which you framing.
3) You can definitely win the race if you maintain good quality, proper quantity , competitive price and good support services.
4) Since your product is not sustain longer so it is very important to keep vegetable fresh and this will be really tough. You must have proper storage facility in CR too to maintain this. or you must have prior arrangement and contact with hotels, dhabas so that vegetables should consumed same day.
5) You are already HR so there is not need to say about which type of people you require to maintain all this as staff.
6) You must have enough buffer of money to give this start.
7) And last but not least more more people ( Ads ) must know you are there and provide such service.

             I think that's enough and definitely its a good idea which can be implemented and execution of A-Z steps in more important.

If you need any help in this pls let me know as i am also planning similar kind of business which will start from my business gifting and than generic retail.
